Vegan Cupcakes Recipe with ULU CBD Oil


150 grams of oat flour

1 tbsp of chia seeds

150 grams of oat milk

4 medium chopped strawberries

60 grams of chopped dates

1 medium banana (140 grams peel included)

1 tsp of baking powder

1 tsp of lemon juice(or apple cider vinegar)

50 grams of coconut sugar(you can omit for sugar-free version)

30 drops of ULU


Combine chia seeds and oat milk and whisk to combine. Mash 3/4 of the banana, chop the rest along with strawberries and dates. Stir together mashed banana, ULU and oat milk/chia mixture together, add chopped banana to the bowl as well. Add strawberries and dates and coconut sugar to oat flour and stir together to make sure that they are covered in flour. Combine content of two bowls together, if it is looking to dry add few tablespoons of oat milk(one at the time) till the dough forms. It should de stiff but still should drop from the spoon very easily. Add baking soda and lemon juice and stir to combine Fill the muffin tray till 3/4 height and bake for 17 minutes or till golden brown and toothpick inserted in the centre comes out clean.

I waited till they are completely cooled down and added a dollop of coconut yoghurt on top and a drizzle of pomegranate syrup(maple syrup would work beautifully too)
